Gluten Free Chocolate Cake In A Mug

 
 

Surprise someone special with a chocolate cake, that takes only ten minutes to make! This easy, gluten-free, vegan, flourless, starch-free and sugar-free, chocolate cake in a mug is YOUR next healthy treat!

 INGREDIENTS:

Cake Recipe:

  • 1/4 avocado

  • 1/2 cup cooked chickpeas/garbanzo beans (rinse if using canned)

  • 2 tbsp. ground flax seeds (flaxseed meal)

  • 3 tbsp. maple syrup

  • 2 tbsp. almond butter

  • 1 tbsp. cocoa powder

  • 1/4 tsp. vanilla extract

  • pinch of salt

  • 1/2 tsp. baking soda

  • 1 tsp. lemon juice or vinegar (optional)

  • lemon zest (optional)

Ingredients

CAKE DIRECTIONS:

  1. Place your avocado, chickpeas, flax seeds, maple syrup, almond butter, cocoa powder, vanilla extract, salt, and lemon zest into a large mug.

  2. Blend together using a hand blender.

  3. In a separate small bowl, activate the baking soda by adding the lemon juice or vinegar to it.

  4. Dump the baking soda mixture into the mug.

  5. Stir well.

  6. Bake in your microwave for 3-4 minutes.

  7. Let the cake cool completely.

  8. Remove the cake from the mug by scraping the sides of the mug *optional*

Icing Recipe:

  • 3/4 avocado (use the leftover avocado from your cake)

  • 2 tbsp. maple syrup

  • 1/4 tsp. vanilla extract

  • 1 1/2 tbsp. cocoa powder

  • pinch of salt

  • lemon zest (optional)

Icing Ingredients

ICING DIRECTIONS:

  1. Place avocado, maple syrup, cocoa powder, vanilla extract, salt and lemon zest to your jar.

  2. Blend using a hand blender or a food processor.

  3. Slice the cooled cake in half from the side.

  4. Ice the cake layer by layer.

  5. Decorate with some pieces of lemon zest and grated chocolate and enjoy!

TIPS WHEN MAKING CHOCOLATE CAKE:

  • Add your favorite nuts to the batter before baking, to give your cake a special crunch!

  • You can also use pistachio butter, or any other seed butter, but peanut butter is not advised for this recipe.

  • Lemon zest adds a special fresh flavor to your chocolate cake. When making your zest, grate only the outside yellow part of the lemon, not the bitter white part.

  • This cake should be baked for 3-4 minutes, but it may take more time or less, depending on the microwave you are using. Place this cake into your microwave for 2:00-2:50 minutes and then check your cake by sticking a toothpick into the middle. If your toothpick comes out moist, put your cake into the microwave for another 15-30 seconds and then check.
