Grain-Free, Vegan Chocolate Mug Cake
This easy, chocolate cake in a mug is not only grain-free, starch-free, and vegan, but is also flowerless and can be made nut-free! The best part is that it takes only a few minutes to make. A perfect sweet treat for you and your loved one! Oh, and did we mention that it’s completely guilt-free?!
INGREDIENTS:
1/4 cup cooked chickpeas (garbanzo beans)
1 tbsp. any nut or seed butter
2 tbsp. maple syrup, or sweetener of your choice
1 tbsp. cocoa powder
a drop of vanilla extract
pinch of salt
1/2 tsp. baking soda
1 tsp. lemon juice or vinegar
1 tbsp. chocolate chips, plus a little more to sprinkle on top
Yields 1 small mug cake
DIRECTIONS:
Place your chickpeas, nut butter, maple syrup, vanilla, and salt into a bowl.
Blend with a hand blender until fully combined.
In a separate small bowl, activate the baking soda by adding the vinegar to it.
Dump the baking soda mixture into the batter.
Fold in the chocolate chips until combined.
Pour the batter into a mug.
Sprinkle some chocolate chips on top.
Bake in the microwave for 1-2 minutes, or until a toothpick inserted comes out clean.
TIPS WHEN MAKING A CHOCOLATE MUG CAKE:
You can use canned chickpeas for this recipe but rinse them really well.
Although the cake will nearly double in size, a smaller mug is recommended since it will make the cake look larger, more appetizing, and presentable.
This recipe makes a relatively small cake, but since it contains chickpeas and therefore is extremely filling, there is no need for a larger cake.
