Gluten Free Banana Bread In A Mug
What can you do with your overripe bananas? You can make this super easy, gluten-free, vegan banana bread in a mug- all under ten minutes! No oven? No problem! This banana bread bakes in your microwave, and you can eat it without feeling any guilt!
INGREDIENTS:
1/4 cup cooked chickpeas (rinse if using canned)
1/4 banana
1/4 avocado
1 tbsp. ground flax seeds (flax meal)
3 tbsp. maple syrup
2 tbsp. peanut butter
1/2 tsp. baking soda
1 tsp. vinegar
pinch of salt
sprinkle of ground cloves
DIRECTIONS:
Place the chickpeas, avocado, banana, flax meal, maple syrup, peanut butter, salt, and cloves into a large, microwave-safe mug or dish.
In a separate small bowl, activate the baking soda by adding the vinegar to it.
Dump the baking soda mixture into the mug.
Blend using a handblender until combined.
Bake in your microwave for 3-4 minutes.
Decorate with the rest of the banana.
TIPS WHEN MAKING BANANA BREAD:
You can use any nut or seed butter to make this recipe.
This cake should be baked for 3-4 minutes, but it may take more time or less, depending on the microwave you are using. Place this banana bread into your microwave for 2:00-2:50 minutes and then check your bread by sticking a toothpick into the middle. If your toothpick comes out moist, put your cake into the microwave for another 15-30 seconds and then check. The toothpick does not have to be completely dry.
