Cauliflower is in season, so let’s roast it!

INGREDIENTS:

  • 1 medium-sized head of cauliflower

  • About ¼ tsp salt

  • Sprinkle of pepper

  • ¼ cup avocado oil

Garnish:

  • Drizzle olive oil

  • Sprinkle of chopped dill

Yields 6 servings


DIRECTIONS:

1. Preheat oven to 375˚ F

2. Separate the cauliflower into florets

3. Slice each floret into bite sized pieces

4. Place on a baking sheet

5. Add salt

6. Sprinkle pepper

7. Pour avocado oil

8. Bake for about 40 min or until desired crunchiness

9. After letting your cauliflower cool, drizzle it with olive oil

10. Toss

11. Sprinkle dill and enjoy!
