Loaded Cauliflower Salad
This loaded cauliflower salad is packed with protein and will fill you up until your next meal.

INGREDIENTS:
1 batch roasted cauliflower
1 batch garlic chicken breasts
1 can chickpeas (1.5 cups)
2 small cucumbers
handful of baby pickles
3/4 tsp salt
1/2 cup olive oil
Yields 6 servings
DIRECTIONS:
1. Cut the chicken breasts avocados, cucumbers, and pickles into small cubes
2. In a large bowl, combine all ingredients together
3. Stir until combined
4. Enjoy!

You can make this salad in advance, but don’t add in the avocado or olive oil until you serve it.
