Sweet Potato Latkes
These crispy sweet potato latkes are a delicious spin on this Hanukkah classic. Gluten free, flourless, vegan, and nut free, these latkes are perfect for anyone to enjoy on every night of Hanukkah!

SHOP INGREDIENTS:
INGREDIENTS:
1 lbs of sweet potatoes (about 2 large sweet potatoes)
1 onion
3 flax eggs
1/2 tsp salt
sprinkle pepper
some chopped dill
Avocado oil, for frying the latkes
Yields about 8 servings
DIRECTIONS:
1. Peel and grate your sweet potatoes
2. Grate the onion
3. Put the grated sweet potatoes and onion into a medium sized bowl
4. Add in the flax eggs, salt, pepper, and dill
5. Mix until combined
6. Heat up a stainless steel skillet with some avocado oil
7. Using a cookie scoop or large spoon, spoon the mixture onto the pan. Do not overcrowd the pan.
8. Fry until the edges become crispy and golden, then flip and repeat
9. Pour in more oil before every new batch of latkes
10. Enjoy with sour cream or applesauce!
Ariel’s Tips:
For the best results, use a stainless steel or a nonstick pan. A cast iron skillet cannot cook these latkes properly.
Make sure that the oil is properly heated before frying your latkes. A good way to check is by wetting your hand, and splashing the oil from a distance. If the oil makes a bubbling noise and splashes, it is hot enough for frying. If nothing happens or it sizzles slightly, it is not yet hot enough.
