Gluten Free Chocolate Chip Cookies

Are you craving something sweet? These cookies are definitely the go-to treat! In just a matter of minutes, you can easily create these delicious, vegan, starch-free, gluten-free, and flour-free chocolate chip cookies that are also rich in fiber! This recipe is so much fun to make with children of all ages since the cookie dough is edible even before baking!


 INGREDIENTS:

  • 2 cups cooked chickpeas (rinse if using canned)

  • 1/2 cup any nut butter

  • 1/3 cup maple syrup

  • 2 tsp. vanilla extract

  • 1/2 cup vegan chocolate chips

  • pinch of salt

  • 1/2 tsp. baking soda

  • vinegar

DIRECTIONS:

  1. Preheat your oven to 350 degrees Fahrenheit.

  2. Grease a baking pan.

  3. Place your chickpeas, nut butter, maple syrup, salt and vanilla into a large bowl.

  4. Blend together using a hand blender, a food processor or a high speed blender.

  5. In a separate small bowl, activate baking soda with vinegar by adding a drop of vinegar onto the baking soda. The baking soda should fizz and dissolve in the vinegar.

  6. Dump the activated baking soda into the bowl with the other ingredients and stir well.

  7. Fold in the chocolate chips.

  8. Spoon the batter on a greased baking pan.

  9. Bake for 40-45 minutes or until golden brown.


Yields about 15 medium sized cookies


TIPS AND TRICKS:

  • Activating the baking soda with vinegar eliminates the baking soda aftertaste in your baked goods.

  • You can use any nut or seed butter to make this recipe.

  • Divide the batter and add seeds, raisins, or nuts in addition to the chocolate chips, or just keep them plain.
